Shredded Beef with Vegetables recipe

8 oz (250 g) fillet or skirt steak, thinly sliced

1 teaspoon cornstarch

½ teaspoon sugar, or to taste

3 teaspoons soy sauce

4 vegetables oil

4 cloves garlic, chopped

1 cup (250 g) small cauliflower florets

1 cup (250 g) sliced bell pepper

1 cup (250 g) flower-shaped or roll-cut carrot slices

½ cup (250 g) sliced bamboo shoots

½ cup (250 g) sliced button mushrooms or canned straw mushrooms

4 thin slices fresh ginger root

½-1 cup (125-250 ml) water

Salt and pepper to taste

How to cook beef with vegetables

METHOD

Combine the steak with the cornstarch, ¼ teaspoon of sugar, 2 teaspoons of soy sauce and aside. Heat 3 tablespoons of oil and fry half of the garlic until golden. Add the cauliflower, bell pepper and carrots and stir-fry until they are tender-crisp. Add the bamboo shoots and mushrooms and stir-fry one minute more. Remove the vegetables and set aside.

Add one tablespoon of oil to the pan and fry the ginger and remaining garlic. Add the meat and fry until it is just cooked. Mix together the water, salt and pepper, ¼ teaspoon sugar and a little more soy sauce. Add this to the meat and stir. Add the vegetables, heat through and serve immediately.
